Dining can be rough at our house – not for Alice, really, she eats most anything, but for her brother who is the epitome of a picky eater and we’re still working on manners with him on that front. The kids do like fish and chips, so I’ve done a gluten free adaptation.
For the fish, I do this:
1 C Bisquick Gluten Free pancake mix + 2 T for dredging
1/2 T Old Bay
1 C Glutenberg Red
3/4 Pound of haddock, cut into strips.
Canola oil for frying
Mix the Bisquick (except the 2T), Old Bay, egg, and beer until smooth. Heat the oil to 375 degrees. Cook the fries as directed. Dredge each piece of fish in Bisquick, knock off the excess, coat in batter and fry for 6-8 minutes until golden brown and delicious. Set on a rack to cool/drain.
